Freshly baked and super simple, this dairy-free soda bread is beautifully crusty and perfect fresh from the oven.
Ingredients
- 250 g strong white bread flour
- 250 g plain wholemeal flour
- 65 g rolled oats
- 1 heaped teaspoon bicarbonate of soda
- 1 teaspoon salt
- 350 ml soya milk
- 1 tablespoon apple cider vinegar
Method
Preheat the oven to 180°C/350°F/gas mark 4.
Add the soya milk and apple cider vinegar to a jug and stir to create a dairy-free buttermilk.
To a large mixing bowl add both types of flour, the rolled oats, the bicarbonate of soda and the salt then stir to combine. Pour in the buttermilk and mix using a wooden spoon. Knead the dough on a flat surface for 2-3 minutes and shape into a ball and press it down to flatten it slightly.
Place the ball of dough onto a lined baking tray and carefully cut a cross into the top. This helps the loaf to cook evenly and gives it a traditional soda bread ‘look’.
Bake in the oven for 40 minutes. Remove and leave to cool for around 20 minutes before slicing the loaf and enjoying with some plant-based butter.
