These little pumpkin-shaped, plant-based bites have a bright orange coconut centre, making them a fun addition to any spooky-season spread!
Ingredients
- 100 g desiccated coconut
- 150 g icing sugar
- 200-250 g dairy-free dark chocolate, melted
- 6 tablespoons coconut oil, melted
- 1 teaspoon orange food colouring
Method
Mix the desiccated coconut and icing sugar together in a bowl. Add the melted coconut oil a little at a time, stirring until the mixture starts to clump together when pressed.
Add a few drops of orange food colouring and mix until evenly coloured. If the mixture feels too crumbly, add a little more coconut oil.
Melt the dark chocolate in a heatproof bowl over a pan of gently simmering water, or in the microwave in short bursts, stirring regularly.
Spoon a little melted chocolate into silicone moulds, using the back of a small spoon to coat the base and sides. Place in the fridge until set.
Press a little of the orange coconut mixture into each chocolate shell, leaving a small gap at the top. Cover with more melted chocolate to seal the filling. Return to the fridge for about 30 minutes, or until completely set. Carefully remove from the moulds and store in an airtight container in the fridge.
