Tofu Feta

Creamy, tangy and completely plant-based, this Tofu Feta is an easy way to add a little protein hit to salads, pasta dishes, wraps and more.
Ingredients
- 200 g firm or super firm tofu
- 100 ml (approx.) extra virgin olive oil
- 35 ml (approx.) brine from a jar of olives
- 1 tablespoon Italian-style dried herbs
- ¼ teaspoon salt
Method
Cut the firm tofu into small cubes and add the cubes to a jar. Fill the jar ⅔ of the way with olive oil and ⅓ with olive brine. Add the mixed herbs and salt. Put the lid on the jar and shake it to combine the ingredients.
Eat the tofu straight away or marinate it overnight for a few days. The longer it marinates, the tastier it will be.
Tofu feta works really nicely in a Greek-style salad but also works well in wraps, sandwiches or eaten as it is for a high-protein snack.
Use any leftover marinade liquid for salad dressings or, when the tofu is finished, cut up another block and re-use the marinading liquid up to 3 times, adjusting the herbs and seasoning to taste each time.
