Falafel Houmous Bowl

This vibrant platter, loaded with colourful veggies and flavoursome falafels, is perfect for sharing!

Ingredients

  • 8 falafels (e.g. Moving Mountains Superfood Falafel)
  • 300 g hummus (store-bought or homemade)
  • 1 red pepper,
  • ½ a cucumber
  • ½ a red onion,
  • 1 large carrot (grated or julienned)
  • paprika
  • parsley
  • lemon juice
  • 1 teaspoon extra virgin olive oil

To finish

  • chilli flakes
  • lemon wedges
  • 1 toasted flatbread (sliced)

Method

Start off by placing the falafels in a pan of hot oil and cook on a medium heat for 8-10 minutes.

While the falafel is cooking, start creating the platter by spreading a layer of houmous on a large plate.

Sprinkle paprika and a drizzle of olive oil over the houmous. Next, dice the cucumber, red pepper, red onion, and layer onto of the houmous alongside the crispy cooked falafel.

Prepare a side salad of carrot and leafy greens, dressed with olive oil and lemon juice. Garnish with chili flakes and lemon wedges and serve with toasted flat bread slices.
