Mediterranean Gnocchi Traybake

Crispy gnocchi, roasted vegetables and protein-rich puy lentils come together in this simple Mediterranean traybake – perfect for nourishing weeknight meals.

Ingredients

  • 500 g shop-bought gnocchi 
  • 250 g cherry or plum tomatoes 
  • 75 g pitted olives, sliced in half 
  • 250 g cooked puy lentils 
  • 1 courgette, cubed  
  • 1 red onion, roughly chopped 
  • 1 red pepper, roughly chopped 
  • 1 teaspoon Italian herbs 
  • 1 teaspoon smoked paprika 
  • 1 tablespoon olive oil 

To serve 

  • hummus 
  • chopped fresh herbs 

Method

Pre-heat the oven to 180°C/350°F/gas mark 4. Roughly chop the vegetables and add these to a baking tray along with the gnocchi, puy lentils, Italian herbs and smoked paprika. Add the olive oil and mix so everything is coated in the seasoning.

Roast in the preheated oven for 25 minutes, gently stir halfway through, until the gnocchi pieces are golden.

Remove from the oven, sprinkle over some fresh herbs and enjoy with a generous serving of creamy hummus.
