Football Sushi Balls

A fun twist on sushi, these bite-sized footballs are packed with sweet chilli flavour and made for sharing while you watch the match! 

Ingredients

  • 200 g firm tofu 
  • 75 g edamame beans 
  • 4 tablespoons sweet chilli sauce 
  • 250 g sushi rice, cooked as per the packet instructions 
  • 1 nori seaweed sheet  

Method

Cook the sushi rice as per the packet instructions and leave it to cool. In the meantime, in a bowl, mash the tofu with a fork and add the edamame beans and the sweet chilli sauce. Stir until combined and add more sauce if desired. 

Place some cling film inside a small bowl and add spoonfuls of the cooked and cooled sushi rice. Using the back of a spoon, press the outside of the rice to create a bowl shape. Add some of the sweet chilli tofu then top with more rice. Pull out the edges of the cling film and carefully shape the rice around the filling to form a ball.  

Cut the nori sheet into small pentagon shapes and press them onto the outside of each sushi ball to create a football pattern.  

Serve immediately or chill until ready to enjoy.
