Fresh, creamy and perfect for dipping, spreading or adding a burst of flavour to meals, this quick and easy tzatziki comes together in just 5 minutes!
Ingredients
- 200 g unsweetened dairy-free yoghurt
- fresh mint
- fresh parsley
- 2 small cloves of garlic
- zest of 1 lemon
- ⅓ cucumber, grated
- 1 teaspoon salt
- cracked black pepper to taste
Method
Grate the cucumber then add the salt, stir and set aside for a minute.
Finely chop the fresh herbs.
Squeeze the excess liquid from the cucumber, either with a sieve, a muslin cloth or your hands.
To a bowl add the cucumber, herbs, yoghurt, crushed garlic, lemon zest and cracked black pepper. Stir to combine and serve with salads, flatbreads, mezzes and more!
