Overnight Oats with Coconut Milk and Chia Seeds

Top with your favourite fruits and nuts to start your morning with something delicious and nutritious.
Ingredients
- 2 cups (180 g) rolled oats
- 1 carton (16.9 oz or 500 ml) coconut water (e.g Goya Coconut Water)
- 1 can (13.5 oz or 400 ml) coconut milk (e.g Goya Coconut Milk)
- 1 tablespoon chia seeds (e.g. Goya Organic Chia Seeds)
- ½ teaspoon salt
- 2 tablespoons maple syrup
- 2 tablespoons slivered almonds, toasted
- ½ cup (100 g) blueberries
Method
In medium bowl, mix oats, coconut water, coconut milk, chia seeds, salt and one tablespoon maple syrup.
Divide mixture between four 1-cup mason jars or small serving bowls. Seal jars with lids, or cover bowls with plastic wrap, and leave in refrigerator overnight.
In the morning, top oats with almonds, blueberries, remaining maple syrup and/or any of your favourite toppings, and serve.
