Eyeball Sushi Rolls

Creepy yet delicious – these eerie eyeball sushi rolls are the perfect bite for your Halloween table.
Ingredients
- 2 nori sheets, plus extra for the ‘eyes’
- 250 g cooked sticky rice
- sweet chilli sauce
- 1 small carrot, peeled into ribbons
- 8 thin slices of smoked tofu
- ½ avocado, sliced
- 1 tablespoon plant-based mayonnaise
Method
Place the nori sheets on a flat surface. With a wet wooden spoon or wet hands, push down the sticky rice onto the nori sheet to create a thin layer of rice.
Layer the sweet chilli sauce, carrot ribbons, smoked tofu and avocado on top of each other at one side of the rice.
Roll away from you, tucking in the sushi fillings as tightly as possible.
Using a serrated knife, slice the long sushi roll into equal sized pieces.
Cut out circles of nori for the eye’s ‘iris’, and place these onto the individual sushi pieces.
Pipe a tiny dot of plant-based mayonnaise onto the ‘iris’ to make it look like an eyeball. Enjoy!
