Comforting Veggie Ramen

A comforting bowl of soft noodles, fragrant broth and fresh veggies that’s bursting with taste and goodness.

Ingredients

  • 3 cloves of garlic, crushed
  • 1 thumb-sized piece of ginger, grated or finely chopped
  • 3 spring onions
  • 1 tablespoon gochujang
  • 2 tablespoons peanut butter
  • 2 tablespoons soy sauce
  • 1 x 400 ml tin of coconut milk
  • 500 ml vegetable stock
  • 2 x portions of noodles, cooked as per the packet instructions
  • optional toppings: pak choi, baby corn, red pepper, sesame seeds, fresh chillies, fresh coriander, charred lime, etc …

Method

Pre-heat a pan with a little oil and fry the ginger, garlic and spring onions for a few minutes. Add the gochujang, peanut butter and soy sauce and mix before adding in the coconut milk and the vegetable stock.

Leave to simmer on a low to medium heat for 5 minutes.

In the meantime, cook the noodles as per the packet instructions and steam or char the vegetables as well as preparing the other ramen toppings.

Build the ramen bowl, by starting with the cooked noodles, then add some of the fragrant broth, then any toppings of choice. Enjoy!
