Meat Free Monday One day a week can make a world of difference

Kitchen conversations: Plates

Founded by siblings Kirk and Keeley Haworth, Plates is the UK’s first and only Michelin-starred fully plant-based restaurant, a milestone that reflects not just culinary excellence, but a commitment to reshaping how people experience the flavour and potential of plants. We chatted to Kirk about what led to his passion for plant-based cooking and what he thinks will be the next trend in the meat free space.

  1. What inspired you to start an entirely plant-based restaurant?

My own personal health journey with Lyme disease which led me to completely changing the way I ate and cooked.

  1. What’s your favourite ingredient in the kitchen?

Salt.

  1. What’s your best kitchen hack or tip?

Work hard.

  1. How do you attract meat-eaters to the restaurant?

To be honest, we just be ourselves and cook food that we believe in and let flavour do the talking.

  1. What’s your most popular dish?

Our laminated sourdough is probably our most popular dish. It’s something we’ve spent years developing, and it’s become a real signature of the restaurant.

It’s inspired by viennoiserie techniques, but it’s very much a savoury sourdough. We use natural fermentation for depth of flavour, then laminate the dough with coconut oil and shea butter. The folding process creates lots of delicate layers, giving it a crisp, pull-apart crust while keeping the inside soft with a slight chew.

  1. How have you noticed cultural attitudes towards meat free change over the last few years?

Yes and no, I think generally, people want to include more fruits and vegetables in their diets whether they eat meat and fish or not.

  1. What do you think the next trend will be in the plant-based space?

I think it will be fibre intake just like protein intake has had its moment the last few years.

  1. What’s the one plant-based dish you think everyone should be able to cook?

Rather than one specific dish, I’d say everyone should learn how to cook vegetables really well. If you treat them with care and respect, and understand how different vegetables respond to heat, seasoning and texture, they can be just as exciting as anything else on the plate. Once you’ve got that, you can make all sorts of great plant-based dishes without needing anything too complicated.

  1. What’s your favourite thing to cook when you’re not at work?

Hot soups in winter, and quinoa salads in summer. I quite enjoy the challenge of trying to cram all 30 of my needed veggies into one dish.

  1. Which restaurant do you love for a veggie meal?

Perilla in Stoke Newington, it’s not vegan but they do some super tasty vegan dishes.

  1. What advice would you give to people wanting to try meat free?

Embrace the challenge and you’d be surprised how delicious you could make it with some effort.
