A zesty mix of sweet pineapple, fresh lime and a little kick from the green chilli. Perfect for scooping up with tortilla chips or topping tacos with!
Ingredients
½ small pineapple, diced
1 small red onion, diced
1 red pepper, diced
2 green chilli peppers, diced
juice of ½ lime
fresh coriander, finely chopped
1 tablespoon olive oil
salt, to taste
Method
In a medium bowl, mix together the pineapple, red pepper, onion, coriander, and green chilli peppers. Add the lime juice and a pinch of salt, then stir everything well to combine.
Add a bit more lime juice for extra zing or a touch more salt to bring out the flavours.
Serve fresh, or keep it covered in the fridge for up to 4 days.
