Veg Noodle Salad

A fresh and healthy salad from Made In Hackney, a food kitchen with a passion for making healthy, sustainable and local food available to all – only 82p per portion!

Ingredients

For the salad

  • 200 g brown rice noodles
  • 1 small bunch fresh coriander leaves
  • 3 organic carrots
  • 1 green pepper
  • 1 red pepper
  • 1 large handful chives
  • 1 bunch spring onions
  • 1 tablespoon sesame seeds (optional)

For the dressing

  • 2 tablespoons organic cider vinegar
  • 1 fresh red chilli
  • 1 tablespoon tamari/soy sauce
  • 1 lime, juice and zest
  • 2 tablespoons organic olive oil

Method

Cook the noodles according to the instructions on the packet. Drain and rinse under a cold tap and leave to cool and dry.

Slice the vegetables finely and shave the carrots with a peeler.

Add all the salad ingredients to a large serving bowl and toss together.

To make the dressing, place all the ingredients in a bowl and mix.

Add the dressing to the salad.

Garnish the salad with herbs such as chopped chives, coriander, spring onions and sesame seeds.
