Spicy Fajitas

A fun family meal packed with plant-based protein and colourful veg!

Ingredients

  • 100 g soya chunks
  • 1 medium onion or 4-5 spring onions, chopped
  • 1 x 400g tin black beans or kidney beans, drained
  • 1 x 400 g tin plum tomatoes, removed from the tin and then chopped
  • 1 tablespoons vegetable or rapeseed oil
  • ½ packet (15 g) fajita or taco seasoning mix
  • 1 green chilli, finely chopped
  • 1 red pepper, chopped
  • ground black pepper

Method

Add the soya chunks to a pan of boiled water and leave covered for about 15 minutes to rehydrate them.  Make sure they are fully covered in water.  (If you’re short on time, keep the soya chunks simmering in the water on a medium heat for about 5 minutes instead.) Once rehydrated, drain the soya chunks.

Add the oil to a large pan and add the chopped onions and chilli.  Cook on a medium heat for about 3 minutes.

Add the chopped pepper and cook for 3 minutes.

Add the drained soya chunks and seasoning mix then stir.

Add the plum tomatoes, beans and some ground black pepper, then cover and cook on a low heat for about 10 minutes.

Serve wrapped in tortillas, or with rice, along with shredded lettuce and fresh tomatoes.
