Peas on Toast

Fresh, packed with goodness and delightfully simple – this is the perfect way to brighten up your toast! 

Ingredients

  • 240 g ( 1½ cups) frozen peas
  • sourdough bread, to toast
  • ½ teaspoon garlic granules
  • salt and pepper
  • juice of ½ lemon
  • optional: chilli crisp, dairy-free feta

Method

Add frozen peas to a bowl and cover with boiling water to quickly defrost.

Remove the water, and add the garlic granules, seasoning and the lemon juice.

Blend with a stick blender until slightly chunky.

Toast the bread until golden.

Spread the pea mixture on top. Top with plant-based feta and chilli oil, or any other alternative toppings such as lemon zest, sundried tomatoes, sliced radishes, microgreens, chilli flakes, fresh herbs, mixed seeds, etc. for other delicious flavour variations.
