Packed with fresh veg and plant-based protein, these dreamy, creamy beans are super quick to make!

Ingredients

  • 1 small head of broccoli
  • 1 white onion
  • 4 cloves garlic
  • 400 g pre-cooked butter beans, drained
  • 400 g pre-cooked white beans, drained
  • 250 g washed spinach
  • 1 tablespoon vegetable oil
  • 300 g silken tofu
  • salt and pepper, to taste

To serve, optional

  • dairy-free cream
  • chilli oil

Method

Break the broccoli into small florets and roughly chop the broccoli stalk. Add these to a saucepan, cover with boiling water and cook for 5 minutes or until soft.

Slice the onion and garlic then, on a low heat, pan fry them in the vegetable oil. When they soften, add the spinach and cook until it wilts.

Place all the cooked vegetables into a high-speed blender, along with the silken tofu and some salt and pepper. Blend until smooth and bright green.

Pour the sauce back into the pan and stir in the drained white and butter beans. Simmer on a medium heat for 5 minutes.

Garnish with fresh basil (or your favourite herbs), a drizzle of dairy-free cream and a dash of chilli oil for an extra kick.

Serve with pasta, rice, roasted vegetables or sourdough bread.
