Butter Bean Curry

Nutritious, tasty and easy to make, this Butter Bean Curry is packed with protein – a guaranteed crowd pleaser.


  • 1 large onion
  • 1 tablespoon vegetarian red curry paste
  • 1 tin coconut milk
  • 2 tins butter beans (or any bean of choice)
  • 1 packet baby spinach
  • salt and pepper


Chop and fry the onion until soft, add curry paste and coconut milk.

Let the liquid simmer and reduce slightly before adding the drained beans.

Add the spinach, handfuls at a time.

Allow to simmer for 20-25 minutes, don’t over cook or the beans will fall apart.

Serve with basmati rice.
