Truffle Quinoa Salad

This nutritious, energy-packed Truffle Quinoa Salad was served to Paul McCartney and team on a number of occasions during Paul’s ‘Out There’ tour.


  • 400 g quinoa
  • 2 apples
  • 150 g raisins
  • juice and zest of 4 limes
  • ½ bunch flat parsley
  • ½ bunch mint
  • 3 red peppers
  • 3 yellow peppers
  • 1 red onion
  • 1 cucumber
  • 9 drops truffle oil (or olive oil if truffle oil unavailable)
  • juice and zest of 1 orange


Lightly toast the quinoa for about 15-20 minutes in the oven.

Heat 2 litres of salted water. Cook the quinoa in this for about 20-25 minutes until just cooked.

Chop the apples, red onion, cucumber and peppers into ½-inch dice. Chop the herbs.

Drain the quinoa once it is cooked.

Add all the ingredients together and check the seasoning.

Use truffle oil to finish.
