Superfood Sausage Greek Salad

Add some plant protein to this classic salad using superfood sausages!
Ingredients
For the salad
- 4 meat free sausages (e.g. Moving Mountains Superfood Sausages)
- 1 heirloom tomato
- 1 block plant-based feta
- ½ cup Kalamata olives
- handful fresh mint
- handful flat leaf parsley
- 5 baby cucumbers
- ½ red onion
For the salad dressing
- ¼ cup extra virgin olive oil
- 3 tablespoons red wine vinegar
- 1 garlic clove, minced or crushed
- ½ teaspoon dried oregano
- ¼ teaspoon Dijon mustard
- salt and pepper, to taste
To finish
- chilli flakes
- olive oil
Method
Begin by pan frying the sausages on a medium heat for six minutes, turning regularly.
Whilst the sausages are cooking, whip up a salad dressing by adding all the dressing ingredients to a medium mixing bowl and whisking thoroughly.
Next dice the tomatoes, cucumbers and red onion. Combine the prepped salad ingredients and toss with the salad dressing.
Once cooked, half the sausages and add to the salad. Finish by crumbling feta over the salad and garnish with a pinch of chilli flakes and final drizzle of olive oil.
