Stove Top Granola

A big hit with children (both preparation and consumption), this crunchy granola uses only fruit or maple syrup for sweetness.

Ingredients

  • 200 g porridge oats
  • 150 g nuts (brazil nuts, hazelnuts, flaked almonds)
  • 100 g raisins/dried fruit
  • 100 g seeds (pumpkin, sunflower, sesame)
  • 50 g dried coconut
  • 3 tablespoons coconut oil
  • 3 tablespoons maple syrup/fruit syrup
  • 1 teaspoon cinnamon

Method

Heat the coconut oil until melted.

Add the porridge oats and cinnamon and stir for ten minutes.

Transfer the oats to a bowl.

Crush the nuts in a mortar and pestle.

Heat the nuts in the pan until brown and put them in the bowl with the oats.

Add the fruit syrup to the pan and stir on a low heat until runny.

Add all of the ingredients including the oats and nuts to the pan and stir on a low heat until they are mixed and starting to brown.

Transfer to a baking sheet and leave to cool.

Store in an airtight container.
