Smoked Tofu Katsu Burger

This crispy panko-coated smoked tofu burger is big on flavour and perfect for a fun night in! 

Ingredients

  • 75 g panko breadcrumbs
  • 75 g cornflour 
  • 100 ml plant milk 
  • 1 x 225 g block smoked tofu 
  • 2 burger buns 
  • 1 spring onion, thinly sliced 
  • ribbons of cucumber, pickled 
  • 3 tablespoons plant-based mayonnaise 
  • 1 tablespoon katsu curry paste 

Method

Slice the smoked tofu into 4 pieces. Put the plant milk, cornflour and panko breadcrumbs into separate bowls or deep plates. Dip the tofu slices into the cornflour, then into the plant milk and then finally into the panko breadcrumbs. 

Cook the coated tofu slices in an air fryer for 15 minutes or until golden and crispy. Alternatively, pan fry in a little oil or cook them in an oven. 

Make a katsu burger sauce by combining the plant-based mayonnaise and the katsu curry paste. 

Assemble: spread katsu burger sauce on the burger bun, add some pickled slaw, then top with the crispy tofu, some pickled cucumber ribbons and some sliced spring onion.
