Simple yet satisfying, these Roasted Chickpeas are a healthy snack which won’t break the bank!
- 1 x 400g can chickpeas
- 2 tablespoons extra virgin olive oil
- 2 teaspoons rosemary (dried or fresh), or other herbs and spices of your choice
- ½ green chilli, finely chopped, or some dried chilli flakes (optional)
Heat the oven to 200C°/400°F/gas mark 6.
Drain and wash the chickpeas.
Drizzle the olive oil in an oven-proof dish and add the chickpeas.
Add the salt and rosemary and, if you like a bit of heat, half a chopped green chilli or some chilli flakes.
Mix the chickpeas around in the oil and seasoning with a spoon so the chickpeas are coated.
Roast in the oven for about 30 minutes or until a bit crisp.
Allow to cool a little before serving.
