From Moscow’s first vegetarian restaurant Fresh, this Powerhouse salad packs in protein, vitamins and minerals and is well worthy of its name!

Ingredients

For the salad

  • 60 g tofu ‘steak’ (pre-marinated for at least an hour)
  • 30 g avocado
  • 30 g cooked chickpeas
  • 15 g sunflower seeds
  • 50 g tomatoes
  • 30 g mixed nuts and seeds (pecan, sesame, pine nuts, pumpkin seeds, hazelnuts)
  • 10 g red onions

For the sauce

  • 2 teaspoons sesame seeds
  • juice of 1 lemon
  • small bunch parsley
  • 1 clove garlic
  • 2 tablespoons olive oil
  • 1 teaspoon soy sauce
  • sea salt

For the base

  • 115 g brown rice, noodles or buckwheat

Method

To make the sauce

Mix the sesame seeds with the olive oil sesame in a blender. Add the garlic, and parsley and blend until smooth. Then add the lemon juice, soy sauce, and salt to taste.

To make the salad

Cook your selected base (rice, noodles or buckwheat).

Chop the onion and dice the tomatoes. Peel the avocado and cut it into slices.

Fry the marinated tofu ‘steak’ on both sides on the grill.

To assemble

Place the rice, noodles or buckwheat on a plate then place the tomatoes, onion and chickpeas on top.

Drizzle some Powerhouse sauce over this and top with sunflower seeds and a sprinkle with a mixture of nuts and seeds.

Place the avocado slices and grilled tofu ‘steak’ on the edge of the plate.
