Mushroom Pasta

A mushroom spaghetti dish bursting with rich umami flavour!
Ingredients
- 140 g spaghetti
- 2 tablespoons olive oil
- 150g assorted mushrooms, cut into small pieces
- 2 cloves garlic, thinly sliced
- 1 tablespoon savoury seasoning sauce (e.g. Yondu Vegetable Umami)
- pinch of crushed chilli flakes
- 1 tablespoon chives, chopped
Method
Cook the pasta as instructed. Reserve some pasta water.
In a large sauté pan, drizzle the oil and cook the mushrooms over a medium high heat until golden brown for about 2-3 minutes. Do not overcrowd the pan or the mushrooms won’t brown. Add the sliced garlic and cook for 30 seconds.
Add the cooked pasta and savoury seasoning sauce (e.g. Yondu Vegetable Umami) and toss well. Add the reserved pasta water if it looks too dry.
Serve with chopped chives and chilli flakes on top.
Note: You can use whatever mushrooms are available but remember that shiitake are especially rich in umami!
