Carrot Cake gRAWnola

Kick-start your morning with the taste of carrot cake in this sweet, crunchy, and irresistibly moreish granola!

Ingredients

  • 4 cups loosely packed raw, shredded carrots (about 10 ounces/300 g)
  • 5 large, very ripe bananas (about 2½ cups)
  • 3 cups (270 g) gluten-free rolled oats
  • 1 cup (250 g) unsweetened applesauce
  • 2 tablespoons cinnamon
  • 2 teaspoons vanilla bean powder
  • 1½ cups (300 g) golden raisins

Method

Finely chop the shredded carrots.

Purée the bananas in a high-powered blender or food processor.

In a large bowl, mix all ingredients together until fully incorporated. Evenly spread 3-4 cups of the wet mixture on each dehydrator tray fitted with a Teflex sheet or parchment paper and dehydrate at 115°F for 2-4 hours, until the top is dry to the touch. Flip over and remove the Teflex sheet or parchment paper sheets and continue drying directly on the screen for another 2-8 hours, or until the desired level of crunchiness is achieved.

Break gRAWnola pieces into the sizes you desire; it’s easier to do before it’s completely dry. Continue drying directly on the screen for another 2-8 hours until the desired level of crunchiness is achieved.

If you don’t have a dehydrator, you can use a regular oven to dehydrate the granola. Just bear in mind it will take an estimated 8-12 hours. Use the oven’s very lowest temperature.
