‘Marry Me’ Mushrooms

Enjoy our veggie twist on the viral ‘Marry Me’ dish and feel free to swap in your preferred plant-based protein!
Ingredients
- 350 g mushrooms (or your preferred plant-based protein, e.g. tofu, tempeh, butter beans or similar)
- ½ white onion
- 3 cloves garlic, chopped
- ½ teaspoon oregano
- ½ teaspoon parsley
- ½ teaspoon chilli flakes
- 80 g chopped sun-dried tomatoes
- 1 teaspoon plain flour
- 300 ml vegetable stock
- 1 tablespoon tomato purée
- 100 ml plant-based cream or tinned coconut milk
- salt and pepper, to taste
- fresh basil, to serve
Method
Finely chop the white onion and sauté in a pan with oregano, parsley and chilli flakes. Once the onions have softened, add the chopped garlic and mushrooms to the pan and cook for 5 minutes.
Add the sun-dried tomatoes and coat everything with a sprinkling of flour. Once coated, slowly add in the vegetable stock, tomato purée and plant-based cream, stirring continuously. Let the sauce simmer and thicken for 5 minutes.
Season to taste and stir in some fresh basil leaves.
Serve with fluffy mashed potato and steamed greens of your choice.
