The veggie celebration begins next Meat Free Monday (22 April), which is also Earth Day.
Now in its fifth year, US Veg Week was established in 2009 by Compassion Over Killing, the Maryland-based animal welfare organisation.
The state’s senator, Jamie Raskin, will sign the “7-Day Veg Pledge” as he has done every year since the event’s inception.
Other politicians are taking part, including those from the veggie-friendly state of California, where LA has already joined Meat Free Monday, and schoolchildren at public schools have also recently done so.
California Senator Ted Lieu has pledged to go meat-free for a week for the fourth year in a row.
“Healthier living is an idea that sells itself and leads to longer lives and an improved quality of life,” he said. “As a state policymaker and father of two, I enthusiastically encourage everyone to participate in US Veg Week by treating themselves to more fresh fruits and vegetables that can lead to a longer, healthier life – and lifestyle.”
